You really shouldn't know that these exist. It would be better for your diet, your health, and your cravings if you forget what you just saw, move on and cook up some nice, tasty quinoa instead. But that's a little boring, innit? This little ingredient is the key to the whole recipe's success: Le Saunier de Camargue Fleur de Sel .
I have no idea why it's so tasty. I have no idea why it's so perfect in this recipe. But it is. This salt is a key player in the caramel that you put in the middle of two layers of brownie. Oh, that reminds me... Who's too intimidated to try to make caramel? See, that's what I thought! You really shouldn't be. It's not hard, and the results are oh-so-gratifying. A lot of people seem to think that they process is super hard/time-consuming/easy to mess up. You might be sorta right on that last one, but you won't mess it up if you follow this handy guide! I know that a lot of recipes beverage technology tell you that you need a candy thermometer, that the sugar-water-corn syrup combo must be a precise beverage technology  346 degrees... what crap. You don't need a thermometer, you need eyes.
Step 1 : Dump your sugar, corn syrup and water into a medium saucepan. Turn heat on high. Step 2 : Small bubbles will begin to form around the sides, 2 minutes. Step 3 : The entire mixture will begin to bubble - do not stir! 3-4 minutes. Step 4 : The sides will begin to brown where there is the most intense heat. Consider stirring. 5 minutes. Step 5 : The entire mixture is browning rapidly. This is a nice, light caramel color, but it needs to be darker for full flavor. 6-6:30 minutes. Step 6 : Ah, the perfect color, just on the cusp of burning. 7 minutes. After you've cooked your caramel, you'll need to pour cream into the sugar-syrup mixture. Pour slowly,
Finally, stir in a bit of Greek yogurt. Set caramel aside to cool, or cover and set on counter until you're ready to use. See, I told you it's not that bad! Now, go order some salt (or use kosher) and start baking.
Fleur de Sel Caramel Brownies Recipe slightly adapted from Baked Explorations Ingredients Caramel Filling 1 cup sugar 2 tablespoons light corn syrup ½ cup heavy cream 1 teaspoon fleur de sel ¼ cup Greek yogurt   Brownie 1¼ cups all-purpose flour 1 teaspoon salt 2 tablespoons dark unsweetened cocoa powder beverage technology 11 ounces quality dark chocolate (60-72%), coarsely chopped 1 cup unsalted butter, cut into 1-inch cubes 1 ½ cups sugar ½ cup firmly packed light brown sugar 5 large eggs, room temperature 2 teaspoon vanilla extract   Method In a medium saucepan, combine the sugar and corn syrup with 1/4 cup water, stirring them together carefully so you don't splash the sides of the pan. Cook over high heat until an instant-read thermometer reads 350 degrees F, or until the mixture is dark amber in color (Beware: it will go from golden brown to burnt very quickly), 6-8 minutes. Remove from the heat and slowly add the cream and then the fleur de sel. Whisk in the Greek yogurt. Set aside to cool. Preheat oven to 350. Butter the sides and bottom of a glass or light-colored metal 9x13 inch pan. Line the bottom with a sheet of parchment paper and butter the parchment beverage technology paper. In a medium bowl, whisk together the flour, salt and cocoa powder. Place the chocolate and butter in a metal bowl. Set over a pan of simmering water (basically, a double boiler) and stir occasionally until the chocolate beverage technology and butter are completely melted and combined. Turn off the heat, but keep the bowl over the water of the double boiler and add both sugars. Whisk until completely combined and remove the bowl from the pan. Let sit until it's at room temperature. Add three eggs to the chocolate mixture and whisk until just combined. Add the remaining eggs and whisk until just combined. Add the vanilla and stir until combined. beverage technology Do not overbeat, as this will make the brownies cakey. Sprinkle the flour mixture over the chocolate. Using a spatula, fold the dry ingredients into the wet ingredients until there is only a trace amount of flour visible. Pour half of the brownie mixture into the pan and smooth the top with a spatula. Drizzle about 3/4 cup of the caramel over the brownie layer in a zigzag pattern, taking care to make sure the caramel does not come in contact with the edges of the pan or it will burn. Use your offset spatula to spread the caramel evenly across the brownie layer. In heaping spoonfuls, scoop the rest of the brownie batter over the caramel layer. Smooth the brownie batter gently to cover the caramel layer. Bake the brownies for 30 minutes, rotating the pan halfway through the baking time, and check to make sure the brownies are completely done by sticking a toothpick in the center of the pan. Chocolate Cake with Salted Caramel and Fleur de Sel Praline Former Chef
Every Thanksgiving I make two desserts. One is always a pumpkin mousse pie and the other is usually something chocolate. This year I really wanted a show-stopper and decided marlow foods stokesley I wanted marlow foods stokesley a chocolate cake which had salted caramel in it in some way. The original recipe came from Bon Appetit and can be found here , but I made some changes to the recipe (see notes at bottom) and added my own touch, the Fleur de Sel Praline for the garnish and inside the cake.
The marlow foods stokesley cake has a lot of parts, but if you take it one step at a time and do some of it in advance, marlow foods stokesley it’s not that difficult. I was very pleased with the way it turned out; the cake itself is rich with a bite of coffee flavor, the caramel has a nice tang to it from the addititon of the sour cream, and the praline adds a bit of crunchy texture and extra salt to contrast with the sweet ganache.
1 3/4 cups sugar 1 3/4 cups all purpose marlow foods stokesley flour 3/4 cup unsweetened cocoa powder (I used Askinosie cocoa, read about it on this post ) 1 1/2 tsp baking powder 1 1/2 tsp baking soda 1 tsp salt ( Fleur de Sel ) 1 cup milk 2 large eggs 1 stick (4 oz) unsalted butter, melted 1.5 Tbsp instant espresso powder 1 cup hot water 1 tsp vanilla 1 Tbsp butter marlow foods stokesley (for buttering the pans) Baking the Cake:
Sift sugar, flour, cocoa powder, baking powder, baking soda, and salt into large bowl. Add milk, eggs, and melted butter. Using electric mixer, beat at low speed until blended. Increase speed and beat 2 minutes. The batter will be very thick at this point.
Divide batter between the two pans. Note; If I’d marlow foods stokesley had 3- 9″ pans I might have used them instead. The two cakes are to be cut into two layers each, and diving the batter between 3 pans would have made it an easier 3 layer cake (instead of 4 layers).
Bake cakes about 30-35 minutes or until a toothpick comes out clean. Cool cakes in pans on racks for 10 minutes. Run a knife around marlow foods stokesley the edges of the pan and then turn the cakes out onto racks. Remove the parchment paper and allow the cakes to cool completely.
Stir sugar, 1/4 cup water, in deep medium saucepan marlow foods stokesley over low heat until the sugar dissolves. Increase heat to medium; cover pan and cook 4 minutes. Uncover; increase heat to high. Boil without stirring marlow foods stokesley until syrup is deep amber, occasionally marlow foods stokesley brushing down pan sides with wet pastry brush, marlow foods stokesley about 6 minutes. Remove from heat. Add cream (mixture will bubble and may solidify, just keep stirring). Whisk in butter, then the sour cream, lemon juice, and a pinch of fleur de sel. Cool completely. Refrigerate if not using right away. Bring to room temperature before using.
Note; This recipe make about 1.5 cups of caramel. I didn’t think it was going to be enough to fill all the layers, but it was. I really liked the flavor too; the sour cream and the lemon juice added a nice tangy taste which helps cut the sweetness of the ganache.
Place chocolate in large bowl. Bring cream to simmer in heavy bottomed pot. Pour the cream over the chocolate and allow it to soften marlow foods stokesley about 1 minute. Whisk until the chocolate is smooth. Cool. If doing in advance this can be covered and refrigerated. Remove from the refrigerator at least 3 hours before using it. It needs to be very soft, but not runny, to be able to frost the cake without tearing it.
Prepare one recipe of Fleur de Sel Praline marlow foods stokesley Break the praline into large pieces for the top of the cake (see photos). Use about 1/3 of the pieces to crush into smaller pieces to be used in the filling. I did this in a mortar and pestle, but you can also put it in a plastic bag and hit it gently with a rolling pin or heavy spoon. You want to make sure the pieces don’t go flying (thus keeping them contained marlow foods stokesley in a plastic bag to crush them).
I like to create a base for my cakes. Plates can be sloped and make it hard to frost the cake and keep it level. Professional bakeries use cardboard cake rounds, but you can certainly make your own: Take a piece of clean cardboard from a box and trace the outline of the cake pan on it. Cut out the circle and cover it with foil. I put the base on top of a baking rack and any excess marlow foods stokesley ganache just falls off (instead of getting all over the plate). Later, you can slide the whole cake (leaving it on the base) onto a platter for serving.
Place 1 layer on the cake round or a flat plate. Use one of the bottom pieces marlow foods stokesley of the cake as your base, bottom side down. Spread this layer with 1/2 cup room-temperature ganache. It needs to be very soft, but not runny, to be able to frost the cake without tearing it. Spoon 3/4 cup ganache into pastry bag fitted with 1/4-inch plain round tip. Pipe ring of ganache around edge of layer. Tip : make sure your ganache is quite soft when you do this. I broke a pastry bag and a plastic marlow foods stokesley bag trying to do this with ganache which was too too cold and firm. Spread 1/3 of the caramel filling evenly inside the center of the lay

Over the last ninety nine posts, I have learnt a lot of new skills. My cooking has improved and expanded in ways I couldn't have imagined when I sat down to write my first post. I've discovered how much I enjoy photography and developed a style I like. Most of all, it has shown me how much I still have to learn and how many more exciting things lie in the future. I can't explain how excited vadilal industries limited I am. 
I also thought it was apt that it therefore contained two of the things I've enjoyed learning about most while keeping my blog: how to make caramel and to create chocolate decorations (as on my Beautiful and Damned Cake and the Present of Profiteroles ). Instead of looking forward, this cake looks back to celebrate what has gone before. 
To my slight surprise, the runaway star of this show for me was the fleur de sel caramel with sour cream. It is truly spectacular. I have spent a lot of time since I made it hovering by the fridge trying to decide if eating it off a spoon (or even dipping in a finger) would really be that bad...
This cake is about as rich as it gets. The cake is intense and damp, then smothered with the glorious caramel. vadilal industries limited The icing, found between each layer and covering the whole cake, is almost ridiculous in its decadence. You take sugar and water and make caramel. Then you whisk in a lot of double vadilal industries limited cream. Then you pour it all over a big pile of dark chocolate. Then you beat in a big bowl of butter. Despite all this, it's not as over-the-top rich as you would think - it's smooth and complex.
I found the most disappointing aspect of this cake to be the cake itself. The bits I cut off to level things up were delicious and I think it's a very nice plain chocolate cake, but it didn't work perfectly with the rest. This could well be the way I made it, but the flavour just slightly jarred with the icing and caramel. Perhaps it was because I couldn't find vegetable shortening so substituted extra butter. Another time I might use a different recipe - perhaps my ever reliable  vadilal industries limited Birthday Cake  with some good quality cocoa. It wasn't in any way bad, just not perfect.  vadilal industries limited
Despite halving the recipe, this was a big cake. I only used about half the icing I made - I'm not a fan of inch thick icing in between the layers and all over, even if it does look striking. If you're also like me, maybe reduce the recipe or make a batch of cupcakes or something to smear the spare icing on.
I'm not entirely sure why I decided on making a butterfly for the top. Perhaps because it was a challenge to make wispy wings that would stay flying in the air and not sag into the icing or snap. 
I forgot to sprinkle some fleur de sel onto the top of the cake until after I had photographed it and eaten a slice, vadilal industries limited hence the fact that only a few photos include vadilal industries limited it. I like the way it looks like the first flakes of snow falling on bare ground around a fragile butterfly flickering in the cold. 
Put the sugar, glycerine and water together in a saucepan. Attach a sugar thermometer. Stir to dissolve the sugar as you bring it to the boil over a high heat. Meanwhile, heat the cream and salt in a small saucepan until the salt is dissolved and the cream has reached a boil, then remove and set aside. Keep going with the sugar until you reach about 350F - then try to keep the mixture at about this temperature until it reaches a deep golden brown. vadilal industries limited At this point, remove from the heat and let sit for a minute before whisking in the hot cream. Let the foam subside, then whisk in the sour cream. Leave to cool then store in a jar in the fridge. 
Preheat the oven to 160C. Grease and line three 6" tins (I only have one here - I split it three ways and did one after another). In a medium bowl, whisk together vadilal industries limited the cocoa powder, sour cream and hot water then put it aside to cool. Weigh out the flour, baking powder, bicarbonate of soda and fleur de sel  and sift into another bowl. In a mixer, beat the butter for 5 minutes. Add the sugar and beat for another 7 minutes, occasionally scraping down the sides - it should be light and fluffy. Slowly add the beaten egg, mixing well between addition. Add the vanilla and beat again.  Start adding alternate small amounts of the flour mixture and the chocolate mixture, starting and ending with the flour. Divide the batter. Bake for about 20 minutes or until the cake is springy to the touch and a toothpick comes out clean. Leave to cool for a few minutes before removing from the tin and leaving to cool on a wire rack. When cool, level out the tops with a serrated knife or cake knife. 
Before you start have all the ingredients measured out and the mixer standing ready. Make the caramel as you did for the fleur de sel caramel above, except that the cream doesn't have salt in it. Instead of adding the sour cream, let it cool for a few minutes. While it cools, chop the chocolate and put it in the mixer bowl. Pour

There a few weeks ago we celebrated four years of my son Jules. I asked him what I owed him prepare cake to make him happy and he replied: "I trust you." Too cute!
So I looked for a cake worthy of the occasion, a beautiful but easy to make cake because I hate taking my head in the kitchen. Here is the simple cake I made for my little prince. "Very simple," though I assure you! Yet it throws, right? The most sophisticated web-lovers will recognize the swirling Eryn leg. This is a slightly adapted defended swirl the contents horizon agrotech of my closet. Originally this cake consists of: a cocoa base + pecans, a layer of light cream caramel fleur de sel, a frozen chocolate + pecan, a foam mascarpone caramel, a caramel horizon agrotech decoration.
For me the pecans horizon agrotech have been replaced with almonds, I did not put in the jelly layer chocolate because I preferred one "crunchy" layer, I preferred a unsweetened cocoa layer on top rather than add another dose of caramel. I admit that the latter choice was not appreciated by Jules, too bitter. The whole thing was just perfect to taste adults! A true wonder.
Do not be frightened by the appearance simply "sublime" of this cake (note the modesty ...) by saying that it must be impossible to achieve because surely very complicated. If I did it, anyone can do it. It just requires a little horizon agrotech planning and patience from each preparation, the time that each cool. It is best to prepare horizon agrotech the night before. But the result is worth it.

Separate the whites and yolks of three eggs.
Place the cake in the circle by packing the bottom.
Add the cream and caramel mix thoroughly.

Add the caramel sauce and mix.

Coming back from my stay in Britain (a first for me) I brought a pot of cream caramel fleur de sel Guerande. After some buttered pancakes I wondered what I could do well with. This is after going on my blog copinaute Gaรซlle blog, "Greed is a nice default." I am greatly inspired and I can tell you that the result is surprising. Well I do not have an ice cream maker, but I had five hours before me. So I present to you an ice cream that will mark your indulgence. :)
This is a dessert that I had to post a little later, but for gourmands who have asked me, here is the recipe: Prep Time: 10 minutes (+ time to whip each time) Resting time: 6 hours (for suckers) or one night (for a perfect ice cream) Cooking time: 10-15 minutes Yield: 4-6 people
250 ml cream 250 ml milk 4 egg yolks 50 grams sugar 50 grams sugar 170 grams of cream caramel (if the recipe on the blog "Gluttony is a nice default.") Shards crepe lace in Gavottes (optional) Chocolate Vermicelli (optional) Liquid chocolate (optional) Preparation: Separate the yolks from the whites. Here are some recipes to use white right here. Whisk yolks and sugar together until white and set aside. In a saucepan, bring the milk and cream to a boil. On low heat, add the caramel and mix well. Pour this mixture over the yolks and whisk as you go.
Repay this mixture into the pan and put on low heat. Mix everything with a wooden spoon or plastic, until thickened preparation. About 4-7 minutes, it has to coats the spoon. Allow to cool before preparing the transfer to tuperware will freeze.

Can you substitute plain sea salt for the

Add the remaining eggs and whisk until just combined. Add the vanilla ways of food preservation and stir until combined. 7. Sprinkle the flour mixture over the chocolate. Using a spatula, fold the dry ingredients into the wet ingredients until there is just a trace amount of the flour mixture still visible. 8. Assemble the brownies : Pour half of the brownie mixture into the pan and smooth ways of food preservation the top with a spatula. Drizzle about ¾ cup of the caramel sauce over the brownie layer in a zigzag pattern, making sure the caramel ways of food preservation doesn't come in contact with the edges oft he pan or it will burn. Use an offset spatula to spread the caramel evenly across the brownie layer, leaving about a ½-inch border around the edges.
